Coconut and Goji Macaroons

I created this recipe one day as I saw a jar full of goji berries in my kitchen next to the coconut. I thought, why not combine them together…
So I made them and brought them to my parent’s 60th birthday in France. All their friends kept asking me about the recipe, they could not believe how healthy, easy and so delicious it was!
These would make a great after yoga treat

Goji berries are natives to Asia and southeaster Europe. They are rich in vitamin C, iron and B vitamin. Coconut is high in lauric acid which is anti-viral, anti-bacterial and anti-microbial. It is also a great source of protein, fats, potassium, calcium, sodium and magnesium.
Contrary to what is usually believed, the saturated fats in coconut do not raise cholesterol. They are actually burned up quickly in the body.
So go for it, enjoy!

Coconut and goji macaroons

200g Shredded dried coconut
60g goji berries
130g Agave syrup / or honey/ or maple syrup
1 lime zest and juice

Process all the ingredients in a food processor for 2min.
Form little balls and flatten them with your hand.
If you have a dehydrator you can dehydrate them for about 5h at 115°F.The outside will be slightly crusty and the inside moist.
If you do not have a dehydrator, they are delicious simply kept in the fridge.
